JORGE’S SALSA

The Story

We were introduced to this great, simple salsa by Jorge Moctezuma. While building and shopping Quad Cookers, we would fire up the Quad for lunch. Jorge brought fresh jalapeños, beautiful, ripe Italian plum tomatoes, and garlic. We found wild green onions in the yard next to the shop, too. It was excelente!

Servings: 6 - 10

Ingredients:

  • 3 Fresh Jalapeños

  • 4 Italian Plum Tomatoes

  • 3 Cloves of Garlic

  • 4-6 Green Onions

  • 1 tsp. Salt

Accompaniment & Sides:

This is the accompaniment for just about anything. Chips, meat, queso, rice, and beans all taste better with salsa. Make plenty; it holds well and tastes better with time.

Quad Setup:

Full chimney of coal, hot fire, Quad with grill in place. Dome is not necessary.

 

Directions:

  • Place whole tomatoes, jalapeños, and onions on the grill. Be very careful; the jalapeño will spit.

  • Grill until the skin is charred black. When charred, carefully remove the stems from the tomatoes and jalapeños.

  • While the vegetables are hot, place in a food processor or blender, along with the garlic and salt.

  • Process until the mixture is a puree.

  • Serve hot over steak (our favorite way) or with tortilla chips.
