The Story

When the weather turns to spring, fresh asparagus begins to appear, just in time to get the grill out. Tasty and packed with healthy benefits, asparagus pairs perfectly with prosciutto, a very thinly sliced Italian ham. Serve this warm-weather crowdpleaser as a side dish or appetizer.

Servings: 6 - 8


  • 2 lbs. Fresh Asparagus, Ends Trimmed

  • 4 oz. Prosciutto, Cut Into 2” Strips

  • Olive Oil & Balsamic Vinegar for Drizzling

  • Shaved Parmesan Cheese

Accompaniment & Sides:

Serve with other appetizers such as cheeses and fennel, along with a nice, light summer wine or artisanal beer.

Quad Setup:

Half chimney of coals, unless you plan to cook other things. Hot fire with grill in place.



  • Wrap each asparagus spear with a strip of prosciutto.

  • Drizzle olive oil on the wrapped spears & place on hot grill.

  • Turning often, grill until the prosciutto is crispy but not burned.

  • Place asparagus on a platter and drizzle with balsamic vinegar & shaved Parmesan.
